Today was not the day for homeschool I guess! Both kiddos were out of sorts today and we were not getting that much accomplished. It happens sometimes and I used to get upset when the day was going bad and we were not doing the things we needed to do, but I am learning to just go with the flow on days like these. That is hard for me to do as I prefer lists and schedules to spontaneity, but I am trying!
This off day did however lead to making a tasty snack, not the healthiest one, but a yummy one for sure! I loved making (and eating!) Chex Muddy Buddies when I was younger, and even when I was not so young! I had all of the ingredients on hand so we took a break from the school work that wasn’t getting done anyway, and made this tasty treat instead.
I used this recipe on the back of a box of corn Chex cereal, and made a minor adjustment. (The recipe is also found on the Chex website).
Chex Muddy Buddies
9 cups Chex cereal (corn, rice, wheat Chex or a combination of these)
1 cup semi-sweet chocolate chips
1/2 cup peanut butter
1/4 cup butter
1 tsp. vanilla
1 1/2 cups powdered sugar (I ended up using closer to 1 3/4 cups to really coat the mixture)
- Measure cereal in a large bowl and set aside.
- In a 1-quart microwavable bowl, microwave chocolate chips, peanut butter, and butter for 1 minute on high; stir then heat again 30 seconds more or until mixture is melted and can be stirred smooth. Stir in vanilla and pour mixture over cereal, stirring until evenly coated. Pour into a large resealable food storage bag.
- Add powdered sugar to bag and seal; shake until well coated (my kids loved this part!). Spread on waxed paper to cool then store in airtight container in the refrigerator. (If they last long enough to have any left to put away; we ate quite a bit immediately after making them!)
